I've not looked closely at gigabit ethernet, but older 100 Mb/s ethernet had 3 voltage levels (+, -, and 0). I don't think IBIS can handle this sort of thing, since IBIS understands only two states: High and Low. I'd stick with SPICE models for the ethernet drop side of the interface.
