You are basically asking two independent questions.
The purpose of [External Model] is to replace the guts
of [Model] without changing any of its connectivity.
[External Circuit] is a more general keyword, it can
be connected in more flexible ways.
Whether you can express an I-V or V-t curve with
equations is a different question. The *-AMS
languages available for the [External ***] keywords
certainly allow you to do that, but the question is
whether you can find an equation which will serve
the purpose accurately enough to model your device.
